Properties of erythritol 

Erythritol is only a little less sweeter than sucrose (it has about 70% sweetness of sucrose), but it does not contain any calories. It belongs to a group of natural sweeteners such as xylitol, mannitol and sorbitol. All four mentioned sweeteners combine one thing – they are sugar alcohols (polyhydric alcohols). They have a low energy value, and at the same time do not raise the level of glucose in the blood. Unlike other sugar alcohols, erythritol is absorbed mainly in the small intestine, and only about 10% enter the colon. Therefore, it usually does not cause unpleasant symptoms. These were observed only after taking a dose of at least 50 g, i.e. two times higher than with other polyols, e.g. xylitol, maltitol, sorbitol and xylitol. Caution, however, should keep children, because in drinks, which often drink the easiest way is to exceed the recommended threshold. 

Neutral and without calories 

Erythritol does not affect the level of insulin in the body or the level of glucose in the blood – it can be said that it is neutral for the sugar economy. It also has an antioxidant function – it combines with free radicals to protect the body against their adverse effects. One gram of erythritol provides the body with only 0.2 kcal. That’s about 20 times less than sucrose. Placing information on the packaging that erythritol is a calorie-free sweetener has its justification. 

How is it produced? 

Erythritol is naturally found in flower pollen and some fruits. You can find it in melons, pears and grapes. Natural sources of erythritol also include seafood, mushroom mushrooms, fermented drinks, sea algae and lichens. Erythritol is synthesized by yeast Yarrowia lipolytica Wratislavia from waste glycerine. Formerly it was obtained from hydrolysates or glucose using other yeast species. 

When erythritol entered the market? 

Erythritol has a similar form to food sugar, although it is slightly less sweet from it. The sweetness provided by 5 g of sugar can be obtained using 7 g of erythritol. The World Health Organization (WHO) confirmed that erythritol is a safe food additive. In the European Union, its use was allowed in 2006. In Poland, erythritol was introduced to the market in 2008. 

Possible applications of a natural sweetener 

Manufacturers can use it as a food additive (erythritol is labeled E968 on the packaging) and consumers can use it instead of sugar. Erythritol is used for cakes, biscuits, coffee, tea, ice cream, jams, marmalades, jelly, candied fruit, mustard and chewing gum. In some countries we find it in drinks and yogurts. By adding erythritol to sweets you can reduce their calorific value even up to 90%! Currently, producers use erythritol not only as a sweetener. Natural sweetener can also act as a substance stabilizing the taste, consistency and color of the product, as well as as a flavor enhancer and thickener. 

Meringues with erythritol? Why not! 

Eritrytol allows you to enjoy the taste of sweet pastries without any remorse. It can replace sugar in any recipe, also in meringues. To prepare light cookies based on proteins and sweetener, you need ingredients like 

– 3 proteins 

– 6 tablespoons of erythritol 

– 2 teaspoons of lean cocoa 

To use erythritol to prepare the meringue you must first grind it into fine dust – it must have the consistency of powdered sugar. Then, whip the proteins with a pinch of salt to stiff foam. The sweetener is added gradually, still whisking. After adding the whole sweetener, you should still whisk the foam for 1 minute. A small portion of foam is applied to a flat baking tray lined with baking paper. The baking time is 20 minutes in an oven preheated to 150 degrees Celsius. There is also available erythritol powder on the market, which facilitates the preparation of baked goods. 

Summing up the above summary of the properties and ways of using erythritol, it can be stated with certainty that there is nothing strange in the fact that erythritol has become a hit. This natural sweetener will not ruin your figure or budget, and at the same time has many uses. There are also no minuses that have other sugar alcohols. In our opinion, it is worth trying out for the sake of carbohydrate metabolism and blood glucose levels.
