The list of fashionable food products in 2018 contains news from the healthy food market. There is clearly one trend of niche fascinations pervading the mass consciousness, which is observed in the form of huge popularity among others goji berries, chia seeds or coconut oil. In 2018, they have the chance to join them jackfruit (fruit of bread tree), sorghum, teff, kombucha or kimchi.

1. Fruit of bread tree (jackfruit)

Jackfruit is a large green fruit that comes from the south of Asia. Nowadays, it becomes very popular because of its consistency, which when re-made is reminiscent of meat – ground pork or poultry. The fruit of the bread tree can be freely seasoned and successfully fakes meat. It is an ideal solution for all who want to stop eating meat for ideological or health reasons, but have a problem to part with its taste. Jackfruit is more and more often used in restaurants serving vegan burgers, sausages are also made and served in other meat-like forms, e.g. as a roast. However, it requires marinade, sauce or a lot of spices to give it a more distinct flavor. Vegans must note that jackfruit is not a good source of protein – it contains about 10 times less than chicken breast and tofu. In spite of its meat-like consistency, it remains a fruit and is not suitable for low-carbohydrate diets.

More and more people are giving up gluten and looking for alternatives to carbohydrate meals. In 2016, the zucchini pasta was the most fashionable one, and in 2017 the trend is rice with cauliflower. It is an ideal low carb replacement of potatoes, rice or pasta, which is part of the principles of paleo and ketogenic diet – the most fashionable diets in 2017. In Western Europe and the United States, ready-made cauliflower can be bought in stores as a frozen food.

3. Pasta with beans

Pasta with beans and other legume seeds is another gluten-free replacement for traditional pasta. It contains a lot more carbohydrates than vegetable pasta and has similar caloric value to the traditional version of durum wheat, but at the same time provides more protein and fiber. Market research shows that red beans are considered to be the tastiest consumers.

4. Sorghum

Sorghum escapes in 2017 for the successor of quinoa. This is one of the ancient cereals – gluten-free. It is used like other cereals – as an addition to the main course, an element of breakfast in the company of vegetable milk and nuts or a component of healthy sweets.

5. Teff

Teff, or the Abyssinian, is a cereal grown in Africa that has won the hearts of gluten-free food lovers and becomes fashionable in Europe and the USA. Perfectly suited as a substitute for wheat flour in recipes. It has more protein and a lower glycemic index than most cereals, which further increases its attractiveness.

6. Fermented products

The more public awareness of the importance of bacterial flora for general health and well-being, the more desirable are fermented food products that promote intestinal health. In Polish conditions, kefir, buttermilk, natural yoghurt, acidophilus, pickled cucumbers and sauerkraut are becoming fashionable. The fermented novelties in the world include kombucha (a drink prepared using the so-called tea mushroom) and kimchi (a Korean dish made of fermented vegetables).

7. Purple food

The purple color of cauliflower, asparagus, potatoes, rice or cereal flakes comes from anthocyanins (natural antioxidant substances that are a dye in plants) that have been added to the product. Thanks to the presence of these antioxidants, the nutritional value of food, which has a stronger anti-inflammatory effect, is increased. In addition, purple food is very attractive visually and encourages to eat.

8. Seaweed

Seaweed will be in the most fashionable dishes of 2017. For several years, they have been appreciated for low calorie content, high content of vegetable protein, calcium, iron, magnesium and B group vitamins, thanks to which they can replace meat in vegetarian and vegan diets. In addition, the chefs love them for the natural umami taste. In the coming months, this trend will be extremely visible, and seaweed will appear everywhere – in cocktails, salads, protein bars and vegetable noodles.

9. Power bowl

Meals served in the bowls is a trend that started the pictures on Istagram. Power bowls are very photogenic, full of superfoods and healthy food (proteins, whole grains, nuts, avocados or fruits). Currently, the pictures go to bars, restaurants, and even to shop fridges. Meals in the bowls are very comfortable, easy to take with you and eat as a lunch at work. Fashionable will be both breakfast and lunch. Some treat the bowls as a way to lose weight. You have to be careful with this, because a meal made of healthy products will not necessarily be low in calories.

10. Ugly vegetables and fruits

In the United States, about 40 percent of food produced is wasted each year. The part is not even collected from the fields due to the custom size or color. Other imperfect and ugly are rejected by consumers in stores. The scale of the problem of wasting food reaches more and more to the society, hence the fashion for unsightly food – shapeless, undersized, imperfect color. This year we will be more likely to choose ugly vegetables and fruits. They taste the same. Why, then, do they have to hit the garbage?
